"I love cheese to much", "Cheese is life", "What do you eat grass?"
These are few questions we get on a consistent bases. Our family practices plant based living. Our home is vegan and we strive for sinful living. With that said we are true foodies! We love going out to eat and creating new recipes.
When we first went vegan I was constantly trying to make foods such as wings, pizza, comfort meals, pasta, thanksgiving dishes, everything we were so accustomed to throughout our lives! It wasn't hard to make those swaps. There is amazing vegan cheeses out there and trust me we've had plenty of bad ones but our personal favorite is Violife and Daiya. They have melty mozzarella, gooey cheddar, zesty cheese sauce and my personal favorite smoked gouda. But enough about my rant on vegan cheeses. Lets get to the good stuff.... Nachos!
This recipe is super easy to make and I promise you will be digging in for seconds, thirds, and probably even fourths..
- Organic tortilla chips of your choice
- Daiya zesty cheese sauce
- Organic black beans & Pinto Beans (canned in fine, just rinse)
- Organic Grape tomatoes
- Organic white onion
- Organic Jalapeno
- Fresh garlic (chopped)
- Cayenne pepper
- pink Himalayan salt
- Trader Joes lime Chile seasoning
- Trader Joes 21 seasoning
- Favorite organic salsa
- Favorite organic vegan sour cream (Kite Hill is the best)
Take a casserole dish and place as many chips as it fits. Start building your nachos. Apply zesty cheese sauce all over the chips. Top with beans, tomatoes, onions, garlic and jalapeños. Add seasonings to taste. If you want to add extra cheese sauce you can. Bake at 400 for 15 min.
Let cool for 2 min. Then top with salsa and sour cream. I definitely think I'll be adding guacamole to my next batch because who doesn't like guac lol. Enjoy and if you make these at home tag us on instagram @liviejuice and share you creation :)
