Creamy Broccoli Slaw


First let me start by saying this recipe is magical! I hate broccoli but this recipe has me eating raw broccoli and I'm diving back in for more! That is a game changer in our house.

We are constantly looking for new ways to stay healthy but we are true foodies at heart! We love tasty meals. We love eating foods that taste too good to be healthy. 

You can find me on the couch watching cooking shows all the time but here's my issue... Most the shows I watch have very few vegan/plant-based recipes but they do give me ideas and I can't wait to veganize a dish.

Let's dive in to this awesome side dish. Its easy to make and perfect for a summer cookout!

Ingredients:

-Vegan greek style yogurt plain (Kite Hill has an amazing brand and is my go to)

-Organic fresh broccoli

-Mustard Seed 

-Mustard Powder

-Black Pepper

-Olive oil

-Organic mix coleslaw 

-Salt

-Lime juice

Place half a container of yogurt into a big bowl. Warm up oil on medium high heat with mustard seeds. Once the mustard seeds begin to pop add mustard powder. Let sizzle for a min then add to the yogurt and stir. Once you have the yogurt stirred well, add salt to taste and lime.

Cut broccoli from the stalk (you can save the stalk for a soup). Bag it and freeze it. Once you have all the broccoli florets, stir into yogurt mixture. Add 1/4 of bag of the organic coleslaw. Stir well and enjoy! You will definitely dive back in for more!
